The last two days have been crazy! I hardly ever go a day without posting something, but yesterday I was just too tired. I started my institutional IPPE (introductory pharmacy practice experience) at Spectrum Health hospital here in Grand Rapids on Tuesday, so that's why I've been so busy. It's basically a (mandatory) unpaid internship that's set up through my school and I get 2 credit hours for completing it. I'll be working 7-3:30 M-F for the next three weeks, but I don't mind because I'm learning a TON while I'm there. The only not-so-fun part is waking up at 5:15 am every day. I have to leave my apartment 45 minutes early because even though the hospital is only 15 minutes away, it's right downtown and it's so huge that I have to park in a lot about 4 miles away and take a shuttle to the hospital. I have a new found appreciation for the close parking lot at my work :)
So, let me just say that I am giving MAJOR props to all of you guys who work all day and then go work-out after you're done. It's a lot harder than I thought it would be! Getting my work-out out of the way first thing in the morning is so much easier, but I literally don't have time now (gym's not open at 4:00 am! haha). I don't know about you, but frankly I'm pretty tired by the time I get home from working for 8+ hours. I actually skipped my work-out yesterday (it was cardio day) but I did manage to get myself to the gym tonight. Today's work-out called for more lifting, and today was a moderate rep day (click here to see Monday's low rep work-out). Here's what I did today:
After I finished lifting I did 20 minutes of HIIT on the treadmill again just like I did on Monday, with 30 seconds at an 8.5 followed by 90 seconds at a 5.0, only today I did it with no incline. I must say that even though it's really tough, I am loving this work-out. I've missed lifting a lot, and not only am I bringing it back full force, but all the supersets and trisets keep my heart rate up the whole time! It's like I'm getting a cardio work-out while I'm lifting, and I love the way that feels. I even love the fact that the whole week every muscle in my body has been so sore I can hardly move; because I know it's a good hurt ;) Better wach out, because I'm building some major muscles over here.
Eats
My latest breakfast obsession has been egg bagelwiches. I discovered this amazing combination on Peanut Butter Fingers (Julie rocks!) and have been eating it every day. On a toasted Thomas Everything Bagel Thin: one fried egg, a slice of muenster cheese (melted) and some raspberry jam.
(I had some egg whites that I had to use up that day)
This breakfast sandwich is seriously SO GOOD! I highly recommend it; I don't see myself getting sick of it anytime soon.
I also picked up some goat cheese the other day when I was grocery shopping to try for the first time.
It was good, but it's different. I think it just takes some getting used to. I put some on my salad that I made for lunch today.
Speaking of lunch...after I finished eating I got a major craving for dessert; I mean, it was bad. So I moseyed on into the cafe that I was sitting at and was eyeing all of their treats, when I spotted this baby:
HOLY GOODNESS. This cookie was amazing. Totally organic and full of delicious peanut butter and vegan chocolate chips. I heated it in the microwave and it was so gooey and delicious. Best part? 162 calories. Win.
And to finish off a day of yummy meals, Eric grilled the most delicious steak and corn on the cob for dinner.
The steak was grilled to perfection and the protein was exactly what I needed to refuel my muscles after that tough work-out. So good!

That cookie was delicious, but I've never seen that brand anywhere else before!
