I was up bright and early to start my day with my current breakfast obsession: No-Bake Overnight Oats!
This is my first official "recipe" that I've created with my PB2 that I picked up last week, but it's really just a combination of ideas that I've picked up from other bloggers. I am not kidding you when I say it tastes just like a no-bake cookie!
No-Bake Overnight Oats:
Combine the following ingredients in a bowl:
- 1/2 cup raw oats
- 1/2 cup milk of your choice (I use skim)
- 1/2 scoop chocolate protein powder
- 2 Tbsp PB2
- 1 Tbsp cocoa powder (unsweetened)
- Stevia or other sweetener (optional)
This breakfast fueled me up for a fantastic bike ride today. I rode the farthest I've ever ridden before, over 40 miles!! The trail was absolutely gorgeous.
I've been looking forward to this ride for over a week now, and I'm pretty sure I was beaming from ear to ear the entire time (well, except for the last five miles, those were rough!)
At my halfway/turn-around point at mile 20, I stopped at a lovely little picnic area in Sand Lake.
I stretched out my incredibly sweaty and dirty legs:
And snacked on a Clif Mojo because as predicted, I had burned through my breakfast a LONG time ago and I was starving:
Then I hopped back on my bike to finish my ride. When I passed through Rockford on the way back, I stopped at a park that I usually refill my water bottle at and ended up just dumping a bunch of water on top of my head. I was SO hot and getting really tired, so it was quite refreshing :)
By the time I finally made it back to my car, I was completely drained. I was doing really great until about mile 35, and then total exhaustion set in. When I got off my bike, my hands were kind of numb and my leg muscles kept cramping. The farthest distance I've ever ridden before this is 30 miles, and I know now that there is a huge difference between 30 miles and 40! Regardless, it was still one of the best rides I've ever had and I can't wait to do it again :D Total Distance: 40.53 miles Total Time: 3:06:59
I cooled off with a delicious strawberry banana smoothie on the way home:
(By the way, these McDonald's smoothies are legit, if you haven't tried them yet!) And then after eating some lunch I spent the rest of my afternoon here:
