Jenny and I never fail to enjoy some good food when we’re together, and breakfast this morning was no exception! We went to Cafe Tosi in St. Joseph, a local cafe with a fun atmosphere and delicious food.
All of the food is here is high quality and fresh, and a lot of it is organic too. Bonus points!
I was craving sweet rather than savory this morning so I went with the strawberry waffle.
I drizzled it with a little maple syrup and gobbled that whole thing up. So good!
After breakfast I hit the road and headed back to Grand Rapids where I promptly changed and then got back in my car to drive to the gym. I did an upper body work-out followed by 30 minutes of HIIT on the Stairmaster. I was a sweaty beast when I left!
I kept the strawberry theme going for lunch with a strawberry spinach salad sprinkled with goat cheese, pecans, and raspberry vinaigrette:
This was my first time ever putting strawberries on my salad before, and it will certainly not be the last! Amazing :) I also had some cottage cheese with more berries on the side:
I told you I’ve been loving fresh fruit lately!
Even though this lunch was delicious, it kept me full for a whopping 60 minutes and not long after I finished it I had a Larabar:
I’m off to make the most of my Friday!
What are your favorite salad toppings?
If you’ve been reading my blog for longer than a day you know by now that my go-to toppings include dried cherries, feta (or goat cheese), avocado, walnuts and sunflower seeds topped with Newman’s Own Raspberry Walnut Vinaigrette. I never get sick of this combo!
