No More Egg Bagelwiches

Do ever throw together a completely random lunch or dinner, only for it to turn out to be one of the tastiest and easiest meals you’ve made in weeks? That happened to me last night. If you remember in yesterday's post, I mentioned that I’m trying to use up all of the food in my kitchen before I move on Saturday. Well, next up on the list of things to use up were two sweet potatoes, an avocado, the two end pieces of a loaf of bread (anyone else avoid eating that part?) and some Laughing Cow light cheese wedges.

I ended up turning all of those ingredients into this delicious dinner:


One of the sweet potatoes was sliced up and baked into sweet potato fries:


And for the second part of my dinner, I toasted one of the pieces of bread and then spread a Laughing Cow wedge on it (Light Mozzarella, Sun-dried Tomato and Basil), and topped it some Hormel Natural Deli Turkey and 1/4 sliced avocado. 


This meal was so good that I actually just finished eating the exact same thing for lunch. Had to use up that last sweet potato and piece of bread anyways :)


No More Bagelwiches

In an attempt to finish off another couple items in my kitchen, including my bagel thins and egg whites, I’ve been eating bagelwiches and egg whites almost every day for the past week. I never thought I’d say this, but I’m actually getting sick of them!

Unfortunately, I’m out of oatmeal, cereal, toast, and peanut butter so my breakfast options are kind of limited. Blaah. We’ll see what tomorrow brings.

And I also picked up the ingredients to make a yummy treat for a friend’s going away party on Friday night. I’ve been dying to make this dessert for months now, and I finally found a good reason! Here’s a sneak peak:


Anyone have a guess as to what I’m making? I’ll give you a hint: It’s from everyone's favorite recipe blogger ;)
