Hey everyone, happy Friday! My apologies for neglecting the blog for the last couple days, life has been crazy! Yesterday morning I woke up, packed, went to work all day, came home and gobbled up a chicken burger (which was so delicious I just can’t leave you without a picture):
(Toppings on my burger included spinach, avocado, ketchup and mustard)
And after I finished eating I hit the road for Grand Rapids and didn’t arrive until 10:00 pm, when I then went straight to bed! Don’t worry though, regular blogging shall resume now :D
Not Another Post Like That
Alright guys, so here’s the deal. I have really been struggling emotionally the last couple days about how I can’t seem to get myself back on track lately and how I’ve put on a little weight. The reality of the situation is that I have gained about 8 pounds in the last couple months and that is certainly not something that I am proud of. I am tired of posting weigh-ins that I am not happy with and writing about how I’m really going to get back on track TODAY and I’m really REALLY going to work hard now at staying in my calorie limit etc. etc. Frankly, I’m sure you all are tired of reading about it as well. Therefore, I’m not going to write another post like that, at least not right now (If you want to read some of those posts you can click here, here, here, or here). I just wanted to let you guys know what’s been going on in my head lately.
Also, I’ve decided not to post another weigh-in until it’s one that I am actually proud of. Hopefully there will be one up by the end of the month, but as I mentioned before, I’m just tired of being disappointed with my weigh-ins and with myself and then sharing it (over and over and over…) with the world. However, I will definitely continue with my regular posts (food, work-outs, what I’m doing, etc.), but if the food starts to get boring around here, it’s because I’m going back to the basics. I gotta do what I gotta do to shed some pounds, and unfortunately that means no massive bowls of cashew butter oatmeal every day.
On that note, let’s move onto today’s eats and work-out!
I woke up fairly early and hit the gym with Eric for a quick chest and back lift (details are on my exercise log). After that, we came home and I made myself a simple breakfast consisting of my usual egg white bagelwich with extra egg whites on the side:
(Side note: that is a recycled photo; there are only so many ways to photograph the same meal!)
I did a little blog reading while my breakfast digested, and then I went back to the gym to get some cardio in. I know it may seem a little crazy to go to the gym twice in one day, but it’s really just a preference of wanting to split up my work-out today. In addition to that, it’s not like I have anything better to do, since I’m off until next Monday :)
Now, back to that cardio. Get a load of this: I ran 5.0 miles! This is fourth time I’ve ever ran that far (not counting my first 10K last month). It was tough, but luckily I didn’t bleed through my shoes this time ;) Needless to say, I was still exhausted when it was over!
Distance: 5.0 miles
Not too shabby if ya ask me ;)
After my work-out I came home and marinated some chicken breast tenderloins in Italian dressing while I showered and got ready. Then I threw them on the George Foreman and grilled those suckers up so I could enjoy them on a salad.
I love using this grill because the tenderloins only need to cook for about five minutes until they’re done. I always check them with a knife and fork before I pull them off:
Lunch is served!
(Spinach, grilled chicken, avocado, dried cherries and walnuts tossed with raspberry vinaigrette)
I’m pretty sure I could eat this salad every day. In fact, I think it’s safe to say that I will be eating it every day, at least until I run out of chicken :)
Have a great weekend everyone!
Question of the Day:
What are your best low calorie-ish (300-400), protein-packed, filling breakfast ideas?
Right now I’m loving bagelwiches and smoothies, but I’m sure I’ll get sick of those eventually!
