One Pound Away

Last night after work, I went out to dinner with one of my good friends who I haven’t seen since winter break back in January: Curtis!

It’s so funny to see how much we’ve changed and grown up over the past few years. Check out this picture of us from summer 2007!

Anyways, we went to one of my favorite local restaurants to eat, Apache Trout Grill. We started off with some tasty bread (which I ate most of):

And I went with my personal favorite for my entree: the Cajun whitefish quesadilla:

“Grilled tortilla with cajun whitefish and a cream cheese spread, black olives, scallions, tomatoes and Cheddar Jack cheese.”

SO GOOD. I’m a huge fan of black olives, and they really give this dish an extra punch of flavor. I highly recommend this meal!

 

One Pound Away

I started my morning off with a new-to-me spinning class and it totally kicked my butt! I will always love my beloved classes at my gym in Grand Rapids (and I still miss that place a ton!), but the instructor of this morning’s class was not messing around! I really liked how he got off his bike and walked around the class, yelling over the music to “speed it up!” and really pushing us to work as hard as we could.

However, my favorite part of the morning was actually when the class was over. The instructor asked one of the ladies to step up to the front of the room and "tell the class exactly what she had told him that morning.” She shyly looked up at all of us and with a small smile said, “I am only one pound away from being at my all time lowest weight.” We all cheered and clapped for her and it just brought such a big smile to my face. I love seeing others achieve their weight loss goals and I couldn’t be happier for her :)

I finished off my morning workout with a quick five minute ab routine before heading home for another sunny breakfast.

My mom hates runny eggs (she can’t stand when I eat raw cookie dough) and she most certainly would not approve of this breakfast, but it was sooo good.

I’ll take my chances of getting salmonella for a dippy egg ;)

 

Well I’m off to shower and get ready for my day, it’s going to be a fun one!!
