Return Of The Breakfast Cookie

Morning everyone, and happy Monday ;) I have to put my big girl pants on today and go to work for the first time in…way too long!


My morning started off bright and early with a lovely step aerobics session in my parent’s basement. Today was the first day in forever that I have woken up before 7:30 to work out, and it was tough getting myself moving! I used to wake up every. single. day. at 6:00 am and get my butt to the gym, but my schedule has been so wacky this year that I haven’t had to do that. I need to start getting back in the habit of working out first thing in the morning again though because I just love the way I feel after I’m done. It gives me energy to get through the day and makes me feel so good to have it out of the way :)

After my step aerobics I did the following ab circuit and repeated it for a total of three times:

  • 25 crunches
  • 15 leg raises
  • 30 sec plank

 

Breakfast

Breakfast today was an old favorite that I haven’t had in a long time, a breakfast cookie! I prepared it last night and when my sister saw it sitting in the fridge, she quickly requested that I make her one as well. Hence, breakfast cookie times two!

In Courtney's peanut butter banana breakfast cookie (right):

  • 1/3 cup oats
  • 1/2 scoop chocolate protein powder
  • 2 Tbsp Naturally Nutty toffee peanut butter
  • splash of milk
  • 1/2 mashed banana
  • sliced almonds


In my cherry cashew butter breakfast cookie (left):

  • 1/3 cup oats
  • 1/2 scoop chocolate protein powder
  • 2 Tbsp Naturally Nutty cinnamon cashew butter
  • splash of milk
  • 1/8 cup dried cherries
  • walnuts

These are so tasty and versatile, you must make them sometime!
