Good Luck Jenny

This morning I took a vote with myself and came to a unanimous decision to turn off my alarm, skip the gym, and sleep in. After a horrible nights sleep on Sunday night and a stressful day at work yesterday, it was exactly what I needed. It felt glorious to wake up on my own (after 9.5 hours of sleep!) and just lounge around the house.



I brought back my favorite bagelwich with muenster cheese and raspberry jam. However, I must say that I definitely prefer this sandwich with egg whites, rather than a whole egg. I was out of egg whites today and decided to switch it up, but I didn’t cook the egg well enough and even though I love dippy eggs, they do not go well with this bagelwich.


After breakfast I did a few things around the house, skyped with my friend Eric, and then got ready to meet up with Jenny for our last lunch date before she leaves for Virginia.

Yes, I said VIRGINIA! As in, really, really far away from me.

Jenny and I have been friends since high school and have grown very close over the last few years. We have a lot in common (especially our love for sushi) and she is one of the happiest, smartest, most positive people that I know. She recently graduated with a nursing degree and just scored herself an awesome job at a small hospital in Virginia. She found a great apartment and is so excited to move on and start this next chapter of her life. I am so happy and so proud of her, but I’m also quite sad that I have no idea when I will see her next Sad smile


For our final lunch together, we went to one of our favorite places, the Silver Swan.



I was tempted to get the same chicken salad that I got last time, but I remembered how good the falafel looked when Melissa ordered it back over Christmas break so I went with that instead.

While we enjoyed our meal, we talked about what’s been going on in our lives lately as well as the future. I can’t believe so many of my friends are already graduated from college and finding “big people” jobs. Only one more year until I’m doing the same! It seriously feels like I just graduated high school.

Eventually we wrapped things up and said our goodbyes. We kept them short and sweet so neither of us would have time to cry (because let’s face it, I’m a cry baby when it comes to moving). I’m going to miss Jenny so much, but I know that we’ll stay in touch and be friends forever. She’s just one of those people, ya know?
