Hellooooooo . Hope you all had a great Sunday. The weather has been gorgeous over here!
I started my Sunday off right with a fabulous breakfast:
My omelet was made from one whole egg and three egg whites and was stuffed with sautéed mushrooms and spinach as well as some tomato basil feta. A side of fresh berries completed the meal.
The last time I made an omelet it didn’t turn out very pretty. It was still delicious, but you know me; I like my food to look good too . Well, I’m proud to say that today’s omelet is the best looking omelet I have ever made, and was quite tasty as well. Double win .
After my breakfast settled I finished Room (review to come!) and then got ready to go biking. The weather was absolutely perfect for riding.
I honestly feel so privileged to live in Traverse City. While I was on my ride, I enjoyed spectacular views like this:
I ended up riding up to my Aunt’s house, who lives on the other side of town at the top of a pretty steep and hilly road (I’m talking about Bunker Hill for you locals). I stopped and chatted with her for a bit before hopping back on my bike and finishing my ride. I covered 18.09 miles in 1:25. Not bad, but the hills slowed definitely slowed me down.
The rest of my day was pretty low key. My mom made my favorite chicken noodle casserole for dinner last night, and I munched on leftovers for lunch.
Dinner was another one of my favorite Mom Meals: spinach lasagna roll-ups!
We also shared a bowl of cherries.
So, here’s something totally random but I thought I would share it. I meant to get this post up hours ago, but I got completely sucked into this movie that I recently purchased:
The thing is, I’ve probably seen this movie a hundred times already. I actually bought it because I saw it on sale last week and I knew I already loved it. You’d think after seeing it so much that I’d be able to multi-task while it’s on, right? Wrong. I literally just sat on my bed with my eyes glued to the television the entire time it was playing. I actually own quite a few chick flicks that I have seen dozens of times, but I just never get sick of them. In fact, I’ll even watch them when they’re playing on TV! Eric always thinks it’s weird when I do that because he doesn’t understand why I would want to watch something on TV that I own and can watch whenever I want. Umm, because it’s a good movie, that’s why! Here are my favorites (and you can’t laugh at me!). I like them because they’re girly, they make me laugh, and they don’t require much thought to follow along .
