It’s a beautiful fall day here in Grand Rapids.
I was so happy when I looked out and saw the sun this morning. It’s been so rainy and gloomy all week that I was starting to forget what it looked like .
So yesterday after I stopped by for an update, Melissa dropped by and picked me up so we could grab a bite and catch up over at Marie Catrib's.
I ordered my favorite item on the menu, the sweet potato and quinoa burger (which I have raved about many times before):
Oh, and apparently I am still on my sandwich kick. No complaints though .
Every time I go to this place I am tempted by the amazing assortment of desserts that they have out on display. I’ve never given in before, but last night Melissa and I decided to go for it.
Chocolate pudding for her, and the most glorious slice of carrot cake I’ve ever laid eyes on for me.
Yowza. This carrot cake seriously rocked my socks off.
After dinner Melissa dropped me back off at my apartment and Eric and I headed out to see the very anticipated Paranormal Activity 3:
I love love LOVED the first two PAs and I’ve been looking forward to seeing this movie for weeks. The theatre was packed, but that didn’t stop it from being quite possibly the scariest movie I’ve ever seen. Don’t get me wrong, I’ve seen a lot of scary movies and I get frightened and startled pretty easily, but I’ve never had a movie freak me out so much that I couldn’t sleep at night. The suspense was so intense that I literally screamed a couple of times. It was pretty awesome .
I made a commitment last night to wake up early this morning and get my butt over to Turbo Kick, which was pretty rough after a night of tossing and turning. (Every time I would start to doze off I would get scary images of a creepy person standing over my bed staring at me and I’d have to open my eyes and check.) I’m so glad I got up and got it out of the way though because I’ve been so tired and sore all day that I know I never would have made it if I wouldn’t have gone.
Post workout breakfast:

The rest of the morning was spent running errands, and when we got back Eric fixed up this spectacular shrimp fajita lunch:
He lightly “breaded” the shrimp with some parmesan cheese and cooked it up on the stove before adding sautéed veggies (onion and red bell pepper) plus some wilted lettuce to the mix.
Another win for Eric in the kitchen. I’m going to really miss his cooking after this month!
Well, I’m off to enjoy my evening. I’ll give you a hint as to what I’ll be doing:
