Easy Peasy BBQ Pulled Pork

Ladies and gentleman, I don’t know how I went so without ever using a crockpot.


My parents got me this little baby crockpot for Christmas, and I today I opened it up and put it to use for the first time. Any guesses as to what I made??


BBQ PULLED PORK! Duh Winking smile.

This morning all I did was throw four pork chops, a few cloves of garlic, and some water into the crockpot and then let it cook all day while I was gone. When I came home about eight hours later, the pork was perfectly cooked and easily fell apart. I quickly shredded it with my hands, added some BBQ sauce, and voilà! My first batch of homemade BBQ pulled pork. So easy and so delicious.

I enjoyed my dinner while plopped on my bed watching the first half of last night’s episode of The Bachelor.


My mind has been racing all afternoon thinking about seminar (I met with my advisor today to practice) and I was honestly a little burnt out. I just needed to veg for a little while! I’m feeling better now though and as soon as I hit Publish it’s time to get back at it. My advisor gave me lots of suggestions and comments today about things that I might want to add to my presentation, questions I might get asked, and so on. I hoped that meeting up with her would make me feel a little better, but I think I’m actually more nervous now! Gaaah, I can’t wait until it’s over.

In addition to meeting with my advisor, today was also the first day of my new rotation. This rotation is my advanced community rotation, and it’s funny because it’s the first one that I’ve had at an actual pharmacy. Since I have nearly five years of retail experience under my belt, I’m pretty familiar with the processes that go into running a pharmacy and hopefully this rotation won’t be too bad.

Before heading to my rotation this morning, I made sure to wake up and squeeze in a workout. Today I did the lower body circuit of the new routine I’m trying out this week.


Once again, I made a few modifications. I only repeated the circuit three times and I did them all in a row (rather than completing five minutes of cardio in between each one), and then ended the workout with 20 minutes on the elliptical. It worked out well doing it this way because I was running behind this morning and this workout got me in and out of the gym in 45 minutes. Score!

Alright my friends, seminar is calling my name. I have a friend coming over tonight who wants to rehearse hers, and on Thursday another friend of mine (who recently graduated) is coming over to listen to me practice mine. If you don’t hear from me in the next couple of days, you’ll know why!
