Hello! Did anyone else have some crazy thunderstorms last night? It was intense over here and at around 10:30 pm my power went out, and then one of my smoke alarms proceeded to beep every minute all night until about 5:30 this morning when the power finally went back on. Needless to say, I didn’t get the best night’s sleep. Even though I say this almost every day, I am seriously going to bed SO early tonight.
In other news, things are going very well. It feels nice to finally start to get into a groove: wake up, work out, go to work, come home and make dinner, relax/take care of other projects that need to be done. This is honestly the first time this year that I am finally starting to feel a sense of stability in my life. Between rotations, graduation, my board exams, and moving, I haven’t been able to settle into a routine for longer than a few weeks. Now that I’m officially a pharmacist, have a steady job, and *finally* have my own apartment,I think I’ll be pretty comfortable here for a while.
Even though I love being on my own, I think the thing I’ll miss the most about living with my parents is having dinner already made when I come home from work! I was quickly reminded of that last night when I arrived back at my apartment shortly before 7:00 with a grumbling tummy after a long day. The last thing I wanted to do was cook something, but I’ve got to start getting in the habit. I didn’t make anything too fancy, but I did quickly coat some chicken thighs with a thin layer of Italian bread crumbs and pop them in the oven. While I waited for my chicken to bake, I munched on a salad as an appetizer.
Still loving this salad combo! Spinach, goat cheese, strawberries, and poppy seed dressing. Mmmmmm…
After thirty minutes, my main course was ready!
I made enough for three nights since that seems to be about how long I can eat a meal without getting sick of it. (Side note – that is actually only true for dinner. I can, and do, eat the same thing day after day for breakfast and lunch and never get tired of it, but I get bored after just two nights in a row of the same dinner. Weird, right?)
I had two pieces and scarfed them down!
The edges were perfectly crispy. Yum!
Now that I’m settling into a routine, I’m going to make more of an effort to make blogging a regular part of that again. I really do miss it! Also, I know I can’t avoid the subject of weight loss forever and I’ll get a post up about it soon enough, but for right now I’m getting back on track and I’m excited about finally being able to devote more time to that. It’s only been one day, but so far so good .
