Last Chance Survey

Good morning and HAPPY HALLOWEEN!

I thought I’d change things up a bit today and do a little survey for ya’ll. I didn’t really have anything to bllg about, but then I saw this “Last Chance” survey on Chelsey's blog and thought it’d be fun to fill out. I always love a good survey!

1. Last food you ate?

A bowl of baked oatmeal for breakfast. I love that stuff! The recipe makes enough for four servings and I’ve made it twice already so I eat it practically every day. So good.

2. Last beverage you drank?

Water. Besides alcohol, I don’t really drink anything else. Every once in a while I’ll mix a Crystal Lite packet in a bottle of water if I want something with flavor, but usually I just stick with plain old H2O.

3. Last workout?

Yesterday morning, I did a C25K workout at the gym. I actually blogged about it!

4. Last thing you pinned?

Lol, this picture about having a stamp made for return address labels for wedding invitations.

Besides Chelsey's to get this survey, the last blog post I read in my Google Reader was from Mindy's blog. I kind of miss having a blogger in the same town as me!

I haven’t been utilizing Twitter as much as I used to, but the last tweet I sent was actually an Instagram photo the other night..

Ah, that would be the pharmacy that I work at! Of course, where I spend all of my time Smile.

I’m currently watching Boy Meets World as I type this post. I love that show! I’ve seen every episode. My other favorite show growing up was Full House. I’ve seen all of those episodes at least five times each, and I still watch it whenever I see it’s on TV.

A batch of baked oatmeal on Sunday night!

13. Last item on your to-do list today?

I need to clean my apartment and take a plate of leftover lasagna over to my grandparents’ house! Hopefully I can get the latter done on my way to work this morning.

Mikey Update

Hello!

Last night I decided to make a big batch of lazy day lasagna to enjoy this week.

I added a ton of spinach to the sauce mixture so each slice packs a full serving of greens, too!

I probably used about five or six cups of spinach in the recipe. I wilted it in the microwave beforehand so it didn’t seem like that much – plus you really can’t even taste it when it’s mixed in the lasagna.

No sides necessary – just a big old slice of the good stuff Smile.

It was quite filling – I actually could not finish this plate. I’m planning on eating half of the pan for dinners throughout the week and I’m going to pack up the other half and take it to my grandparents’ house for them to enjoy. I don’t visit them often enough and they are always grateful for a home cooked meal Smile.

I spent the rest of the evening cuddling with this little guy..

Speaking of Mikey, I think I owe you guys a little update. I decided to hold off on getting another kitty right now. Mikey is enough work as it is, and if there’s any chance that a second one would mean that two little monsters are chewing on everything in my apartment and running around all day and night, then it’s not a good move for me. Besides that, the process of introducing a second cat to him would be difficult because I have large gaps under the bedroom and bathroom doors in my apartment. Since Mikey can fit under them, I wouldn’t really have any way to keep them separated while they got used to each other, or (heaven forbid) if a cat fight broke out. Lately, Mikey seems to be mellowing out a little. I’ve been letting him in the bedroom for the first part of the night, mostly because I’ve been lonely. He’s usually good for a few hours, but around 1:00 or 2:00 am he gets the boot. Hopefully someday he’ll behave well enough to stay in the whole night Smile.


This morning, I hit up the gym for another C25K workout. I’ve missed a few runs, so right now I’m trying to catch up. Today’s thirty-minute workout looked like this:

  • 5 minute warm-up (walk @ 4.0 at incline 3.0)
  • 3 minute jog
  • 90 second walk
  • 5 minute jog
  • 2.5 minute walk
  • 3 minute jog
  • 90 second walk
  • 5 minute jog
  • 3.5 minute cool-down (walk @ 3.5 at incline 0)

Unless otherwise specified above, I do my jogging segments at a speed of 5.3 and my walking segments at a speed of 4.0. Of course I wish I was faster, but right now just running at a 5.3 is a challenge, especially for five minutes! Eric is going to run the Turkey Trot on Thanksgiving with me this year and I don’t want to have to stop constantly to walk – it only makes the run longer! Haha.

I remember when I used to go the gym consistently five or six times a week. Now, I’m lucky if I get in three days! Exercising is one of those things that becomes more addicting the more that you do it – it’s just tough to get into that daily routine.

Post workout, I came home to shower, eat, and blog.

I’m off to work, but I’m sending love and prayers to everyone over on the east coast. I hope none of you were affected terribly by Sandy, and I’m glad that the worst of it seems to be over. <3

Kappa Psi Great Lakes Province Fall 2012 Assembly

Good morning!

As you all know, I spent my weekend in Big Rapids for the Kappa Psi Fall 2012 Assembly. It was fun, but it was also a lot different attending as graduate members than as collegiate members. There is a whole new generation of Kappa Psi’s on campus now that we’re graduated, and we don’t know many of them very well. Besides that, a lot of our friends that used to go to the meetings with us when we were in school were not able to make it this year, or simply just didn’t want to go. We were a little bummed that things weren’t the same, but I guess that’s part of growing up, right?

Anyways, Eric and I still had a good time and I have lots of pictures to share! On Friday night, we grabbed dinner with a couple of friends who weren’t there for the conference but happen to live in Big Rapids. After that, we met up with one other couple and spent a good portion of the evening hanging out in our hotel room before heading out to the bar to continue the party.

I don’t have any more pictures from Friday night, but we had a great time catching up with old friends and hanging out at one of our college hot spots. Brought back a lot of memories!

On Saturday, Eric and I slept in and then decided to spend most of the day relaxing. We rented a movie (Anyone seen Cabin in the Woods? That movie was strange…), went to a continuing lecture at lunch, and took a long nap in the afternoon.

The Saturday night banquet is always one of my favorite parts of these assemblies. I love getting all dressed up and getting lots of group photos with all of our friends. Here I am with my friend Josh. He graduated a couple of years before me, but I’ve known him since before I started pharmacy school. He used to intern at the pharmacy I currently work at and his dad owns a pharmacy in one of Traverse City’s neighboring towns, Elk Rapids.

I have also become good friends with Josh’s wife, Lindsey. She does a lot for the fraternity and helped a lot with the planning of this meeting.

I actually wasn’t impressed with any of the food. The rolls were cold, the veggies tasted like they came out of a bag in the freezer, and the potatoes were undercooked.

Although, I suppose dessert sort of made up for those things.

It was a small turn out compared to previous assemblies, but considering the fact that Big Rapids is such a small town with not much to do, I’d say it was pretty good!

After dinner, Eric and I quickly changed into some costumes and headed to the Kappa Psi house for a Halloween party!

I was a gypsy and he was my defender. We picked up the costumes last minute at a Halloween store on Saturday afternoon. For waiting until the last minute, I was pretty pleased with our finds!

Since I initially wasn’t planning on wearing a costume I didn’t have any shoes to go with the outfit, but I found these cute flats on sale at Maurice’s for only $5.00!

The chapter hired a DJ to entertain, and the party was a lot of fun. Unfortunately, Eric and I were so tired from the night before that we only stayed for about an hour and a half before deciding to call it an early night. We came back to the hotel and tried to finish our movie, but I could barely keep my eyes open. The second he turned it off I passed out and slept for nine hours straight. Guess I needed the sleep!

Blog Updates–Two New Pages!

Good morning!

Instead of a regular post this morning, I wanted to share a couple of updates to the blog that I spent some time last night working on. I updated some of the old pages (the “workouts” page still need some work though), but most importantly, I created two new pages!

The first page I created is a pharmacy school page.

Since I get quite a few questions about school, I thought this would be a more organized way to keep all of my pharmacy school related posts as well as a more detailed explanation about the program I completed. I also included links to my posts about graduation and the licensure procedure, as well as a section about Kappa Psi. I figured that I mention those things enough on the blog that they deserve their own spot!

The second page I created was a recipe page.

I was hesitant about adding this page because I don’t consider myself extremely talented in the kitchen and this isn’t a cooking or recipe blog, but I think I’ve acquired enough recipes over the past year and a half or so to give it its own page. Even if I’m not a pro, all of my simple creations (as well as some of mom’s!) are now conveniently found in one place. Surely some of them must be okay, especially since my Greek yogurt pancake recipe is the most popular post on the blog!

A Weight Loss Update (Sort Of)

Hello! Hope you all are having a great week so far. As always, I’m counting down the days to the weekend – only one left! This weekend I’ll be heading down to Big Rapids for the Kappa Psi fall assembly. For those who don’t know, Kappa Psi is the co-ed pharmacy fraternity that I joined in pharmacy school. It was a huge part of my life for four years and it’s actually how I met Eric too – he was the president the year I pledged. Every fall and spring we have a regional meeting and this year it was my chapter’s turn to host so it’s being held in Big Rapids.

I am pretty excited about this weekend – it will be the first meeting since we arranged the provinces and the first one I’ve attended as a graduate member!


In other news, there is not much going on around here this week. On Tuesday I had to get a couple of cavities filled (darn cruddy enamel), which made for an interesting morning at work since I had to be there right after my appointment. I felt so ridiculous trying to answer the phone and talk to patients – I couldn’t smile straight and I kept accidently chomping on my cheek. It was pretty attractive.

I got lazy with lunches this week and reverted back to an old stand-by:

A ham sandwich on an Everything Bagel Thin with lettuce, avocado, and a Laughing Cow wedge; plus a Chobani yogurt and a Special K snack bar. I used to eat these Special K bars all the time as a pre-workout snack and I forgot how much I like them. They’re pretty tasty and are only 90 calories. My favorite flavors are chocolatey pretzel and honey nut Open-mouthed smile.

Right now I’m sitting here with Mikey thinking about how I really owe you guys a weight loss update, and how badly I don’t want to write one.

The truth is that this entire year has just been a bust with the whole weight loss thing. I’ve probably “started over” fifty times, and none of the efforts really lasted more than a couple weeks. In fact, the majority of the time I only made it a few days before straying away from the plan and giving in to some tasty temptation. I have written numerous times about why I want to lose weight (two favorite posts are this one and this one), and I’ve also written numerous times about falling off the bandwagon. Well, all I have to say about that is that 2012 just wasn’t my year. I’m not about to give up though – I have still come way too far to do that!

This past week I’ve been doing really well counting calories and staying in my budget. It’s helped; I’ve lost 3.5 pounds since Monday! I’ve also started recording my workouts in my calorie log, which is something I’ve never done before.

I’ve found it helpful because it reminds me that you never burn as many calories as you think you do when you work out! It also motivates me to get to the gym because when you record workouts, it adds more calories to your daily budget. More calories = more food!

Another thing I’m proud of myself for is that I have officially gone two days now without having a single slice of the cake that’s been sitting in the pharmacy. It’s National Pharmacy Week in Michigan and our store secretary gave us a cake with all of our names on it to celebrate, and let me tell you; it is so tempting! It’s been a long time since I’ve said no to work treats, so that’s a pretty big accomplishment for me. To help tame my sweet tooth, I’ve been snacking on microwaved apples with cinnamon and a teaspoon of brown sugar.

When you’re in the right mindset, it does the trick!

I’m not ready to share my weight yet, but I promise I will soon. I did so well for the first two years I was losing weight and dropped a hundred pounds in that time period but then I got lazy. If I could just get serious for a few more months I could finally get to my goal weight. All in due time, my friends!

Baked Oatmeal with Cinnamon and Cranberries

It’s been a while since I’ve posted a recipe on the blog, so I’m excited about today’s post!

On Sunday I stopped by Oryana to pick up a sandwich for lunch, and while I was there they had a big post of baked oatmeal left over from breakfast and I helped myself to a sample. Well, I was seriously blown away by how good it was and had to get my hands on the recipe. I inquired with the checkout clerk, and she told me to check the recipe wall in the back of the store. After having no luck there, and no luck on their website, I decided to try to just recreate it myself. I had glanced at the ingredient list and it was pretty standard, so after browsing through various other baked oatmeal recipes it didn’t take me long to throw together my own.

I used quick oats in this recipe, but next time I’m going to use real old fashioned oats. The oatmeal at Oryana had used old fashioned and tasted chewier, which is how I like it.

It was really easy to prepare the oatmeal. I just mixed all of the dry ingredients in a large bowl..

then combined all of the wet ingredients in a separate bowl and added it to the dry. After mixing it all together, I poured it in a greased baking dish and popped it in the oven.

This recipe provided me with a quick and easy breakfast for 4 days. I hope you like it as much as I do!

Baked Oatmeal with Cinnamon and Cranberries

Ingredients

  • 2 cups old fashioned or quick oats
  • 1/2 cup brown sugar
  • 1 tsp. baking powder
  • 1/2 tsp salt
  • 2 tsp. cinnamon
  • 1/2 tsp. ground nutmeg
  • 1 egg, beaten
  • 3/4 cup non-fat milk
  • 1 tsp. vanilla
  • 2 Tbsp. butter, melted
  • 1/3 cup dried cranberries

Directions

Preheat oven to 350 degrees. Combine oats, brown sugar, baking powder, salt, cinnamon, and nutmeg in a large bowl and mix evenly. In a separate bowl, combine egg, milk and vanilla. Pour egg and milk mixture over oat mixture and stir until evenly coated. Add melted butter and mix evenly. Stir in dried cranberries.

Pour in a greased 9x9 baking pan (I used a 9” glass pie dish) and bake for 20 to 25 minutes. Slice and enjoy! Serves 4.

Nutritional Information (per serving): Calories: 370 | Total fat: 10 g | Saturated fat: 4 g | Carbohydrates: 74 g | Dietary fiber: 5 g | Protein: 8 g

I store it in the refrigerator, and heat it up in the microwave with a little milk in the mornings when I’m ready to eat. The oatmeal soaks up the milk and gets nice and moist. Delicious!
