Midweek Trip to Lansing

Good afternoon!

First off, I just want to say hello to any new readers who found my blog through SparkPeople! Yesterday, I was selected as a SparkPeople Motivator and I was both surprised and honored. I don’t really use my SparkPeople account much anymore, but this is the third or fourth time I’ve been given a SparkPeople Motivator award and it is always a pleasant surprise. Anyways, yesterday I had the day off work and it was amazing. I decided to treat myself to a manicure and pedicure and spent most of the late morning/early afternoon at the salon!

It was so relaxing and totally worth the money. After my mani/pedi I had lunch at Oryana and then came home to pack for a mid-week trip to Lansing! I have to work this weekend and won’t get to see Eric, and since I had yesterday off and don’t have to be at work until 4:00 today, it was the perfect opportunity for a little visit. Yesterday was also our six month date-iversary, so it worked out nicely Smile.

We had a nice evening at his apartment. He cooked our favorite dinner – steak pasta with parmesan garlic sauce from Buffalo Wild Wings.

He prepared the steak while I did the hard part – cooked the spaghetti and poured the wine Winking smile.

To prepare the steak, he seasoned it with black pepper, seasoned salt, onion flakes, and garlic powder. Then he added oyster sauce and General Tso’s to the mix and let the steak cook up.

Lastly, he topped it with a few generous squirts of the parmesan garlic sauce and then added the pasta. Stir it all together and voila!

The parmesan garlic sauce makes this dish. It gives it a ton of flavor and a nice spicy kick – I love it!

We also made dessert: four layer delight! Eric decided to make it because he knows it’s one of my favorites. It is so funny watching him cook – for someone who is such a good cook, you would think he would have a better stocked kitchen than what he does. For example, he used a knife as a meat tenderizer when he was cutting the steak, and then he used a ladle to flatten the crust for the four layer delight.

I love the guy, but I was cracking up watching him do this. Haha

The finished product was a little messy so I didn’t get any pictures, but it was yummy!

We spent the rest of the night relaxing on the couch, and I left this morning when he left for work. It was so nice to hang out in the middle of the week, but it made it feel like Friday. I was kind of bummed when I had to leave this morning to come back to Traverse City, but it’s my weekend to work. Bummer.


On the way home I stopped at Starbucks in Mount Pleasant to grab some breakfast, since the piece of Four Layer Delight I had before I left didn’t do a good job of filling me up Winking smile.

I got a salted caramel mocha and a spinach, egg white and feta wrap.

I checked the stats and the wrap has 280 calories and a whopping 18 grams of protein! Pretty good for a breakfast on the go.

The wrap provided good fuel for my C25K workout that I completed after I got home. It was a good one! Here’s what I did:

  • walk 1/4 mile @ 4.0
  • jog 1/2 mile @ 5.3
  • walk 1/4 mile @ 4.0
  • jog 1/2 mile @ 5.3
  • walk 1/4 mile @ 4.0
  • jog 1/2 mile @ 5.3
  • walk 1/4 mile @ 4.0 –> 3.5

Total distance: 2.5 miles
Total time: 32:30

Oh, someone asked me the other day if I’m still strength training because lately I’ve only been posting cardio workouts. Well, the honest answer is no, I have not been doing much strength training lately; but that’s really only because I’ve been lazy. However, I am planning on starting to write weekly workout schedules and start consistently lifting again, beginning next week. I’ll keep you posted!

I just grabbed a quick shower and now I’m going to make some lunch before heading into work for the night. Have a great weekend!
