Greek Yogurt Veggie Pizza

Good morning! Usually my weekends that I have to work are pretty boring, but this weekend actually turned out to be quite a good one! Eric had plans to go skiing with some of our friends on Saturday up north and was going to drive up on Saturday morning to meet up with them. I knew he was probably going to staying with me on Saturday night, but didn’t expect him until late. Well, after a long night on Friday I came home a wonderful surprise – Eric was hanging out on the couch waiting for me! It was totally unexpected, and it was so nice spending Friday night and Saturday morning with him before I went back to work. I was definitely more cheerful than I usually am Winking smile.

On Saturday night, we took advantage of one of his Christmas presents from my parents: a “Two on the Town” Dinner & a Movie gift card to La Senorita. It’s a gift card that pays for dinner for two at La Senorita and includes two movie tickets to the local theatre. Great idea for a date night!

Dinner options for the gift card are from a limited menu, but it pretty much has all of our favorite foods anyway so it didn’t really bother us.

For my main meal, I went with the spinach and mushroom quesadilla. I ended up eating half of it and taking the rest home for dinner on Sunday night. It was good!

The best part of the gift card, however, was that it included dessert for each of us! We each got to choose either fried ice cream or peanut butter pie; the PB hater (I know, crazy!) went with the ice cream and I helped myself my a slice of pie.

It was a really fun night, but after dinner we came home and crashed hard. Eric was exhausted from skiing all day and I was tired from a long day at work – plus I had to get up and do it all again the next day. Regardless, I was still so happy to get to see him this weekend. We never get to hang out on the weekends that I have to work because there’s really no point. I obviously can’t go to Lansing, and if he came to Traverse City he’d have to drive six hours round trip just to hang out for a few hours. It worked out nicely that he had plans up north anyway this weekend Open-mouthed smile.

On Sunday night, I spent some time doing some food prep for the week. I actually have a new recipe to share with you all! It’s for a veggie pizza, but it’s not like a normal pizza. I got the recipe from one of my friends a couple of months ago and tweaked the recipe to my liking. It’s perfect to make on a Sunday to pack up for lunch all week, and it also makes a great snack or appetizer at a party.

This pizza uses a regular store-bought pizza dough (keeps it simple!), and instead of pizza sauce there is a mixture of cream cheese and plain Greek yogurt layered between the crust and the toppings. It’s then topped with tons of fresh, chopped veggies and some shredded cheese. You can use any vegetables that you want, but I prefer broccoli, red bell pepper, and carrots. Yummy!

Greek Yogurt Veggie Pizza

Ingredients

1 package Pillsbury thin crust pizza dough
8 ounces cream cheese, softened
3/4 cup plain Greek yogurt
2 tsp. Ranch dressing seasoning mix
3 cups finely chopped vegetables (broccoli, bell pepper, carrots, and cauliflower work best)
1 cup shredded cheddar cheese

Directions

Preheat oven to 400 degrees. Spread pizza dough on greased cookie sheet and bake for 10 minutes. While pizza dough is cooking, mix cream cheese, Greek yogurt, and Ranch seasoning in medium-sized bowl. Spread yogurt/cream cheese mixture evenly on cooked pizza crust, and top with chopped veggies. Finally, sprinkle cheddar cheese evenly over entire pizza. Serve immediately or refrigerate until served. Serves 6 to 8.
